三ノ輪駅の近く。中華料理店。
看板メニューは、長崎ちゃんぽん。
きちんとお店でスープを抽出されている点で、
都内の長崎ちゃんぽんのお店の中では貴重な存在だ。
頂いたのは、
「長崎ちゃんぽん」（900円）
スープは、鶏がらと豚骨がベース。
鶏がらの華やかさと、豚骨のしっかりとした味の「黄金比」(お店の表現を借用)。
他店と比べると、どちらかというと鶏がらの比重が大きいか。
なので、非常に軽やかな仕上がりのスープになっており、
強制的に旨みを加えてドロドロにした他店のスープとは一線を画す。
海鮮の旨みは、非常に軽く乗っかり、
野菜の旨みは、味わい的な軽さを加える。
ただ、もう少し重さがあると、個人的には好みに近かったのだが。
でも、スープ自体はとても美味しい。
麺は、長崎直送。ちゃんぽんの麺。
標準的なものよりも、若干細め。そして若干硬めか。
個人的には、もっとグデグデに柔らかくてもいいぞ。
スープでもっと煮込まれていてもいいかも。
そういう意味では、メニューに載っていた「焼きちゃんぽん」の方が、
僕の好みに近いのかも。
