Raw milk, the raw material, is a very delicate material that loses its freshness easily. Therefore, we send fresh raw milk directly from a contracted farm near Tokyo late at night, and it arrives within a few hours at the cheese factory attached to our Hibiya store, where it is immediately processed early in the morning. The only ingredients used in cheese are milk and salt. As it is simple, we are particular about the materials used. We do not use any preservatives or additives, and we deliver the pure taste of freshly made milk every day.
