We had lunch at the Hegi Soba restaurant on the 8th floor of Tokyu Twins in Machida. Hegi soba uses ``Funori'' as a binder, making it a very smooth soba that goes down easily. It is a specialty of Niigata. I ordered "Duck Seiro" for 1,580 yen (10% tax included) and "Maitake Tempura" and "Eggplant Tempura" for 200 yen each (10% tax included). It's been a long time since I've had Hegisoba, and it's still delicious. The duck soup contains thick fried tofu (like fried Tochio), which makes me happy.
