なぜなら、「仕入れロスを出さないほうが、お客様にリーズナブルなお値段で出せるし、店としても長く品質を維持できる」から。「すべてをムダにしない。なので、来店客の多少に関わらず、材料のある範囲でお受けします」、とのこと。「前日午後3時頃までにお電話いただければ、殆どの場合、ご予約可能です」、との小林店主のお話しでした。
お酒も、ソフトドリンクから、梅酒、焼酎、日本酒、ワイン（ハウスワインもボトルもあり）等々まで、料理に合うものに絞って、なかなかのものを厳選してリーズナブルなお値段で揃えていらっしゃいます。
すべてのベースになっている料理のコンセプトは、美味しい野菜をおいしくいただく、です。「今週の野菜」という野菜だけの写真メニューが別にあって、毎週９０−１００種類の野菜のメニューが紹介され、揃えていらっしゃるそうです。このなかから、４０−５０種類を使った野菜サラダは、４−５種類のソースを添えて出されます。これが絶品！メインディッシュは、お店に伺ってからのお楽しみ。
