その初夏の食材といえば、鱧（はも）や鮎（あゆ）です。
泉やでも、そろそろ鱧を始めます。
湯がいて梅肉はもちろん、炭火で皮目を炙って薬味と共に刺身、
京都九条葱とのしゃぶしゃぶなど…。
