特製はいくらかお値段高めですが、こちらで無いと鴨が乗ってない。オーソドックスな鴨だし中華では豚のチャーシューのようです。
というわけで店頭の食券機でポチってから店内へ。
まず甘い鴨の香りとスパイシーな山椒にやられます。
トッピングの鴨ロースには1枚ごとに実山椒が一粒づつ乗せられている凝りようです。これは鴨からいくしかない。ネギと一緒にいただくと、しっかり食べ応えのある鴨で美味しい。脂は少ないです。
そしてスープですが、思ったほど鴨が強くなく、醤油が立ってる感じです。鴨の甘さを加味して醤油はキリッと塩味の強いものを使用しているんでしょうか。
またストレートな中細麺がすごくいいですね。全粒粉入りでも合うだろうなという印象。
上品な美味しさの一杯でしたが、個人的にはもう少し鴨のワイルドさが前に出るといいなぁ。
