鶏白湯 塩【ドッグハウス】@富山県富山市高屋敷。こちらもミシュランビブグルマン獲得の実力店。鶏ガラや丸鶏を軸に凝縮した旨味をしっかりと抽出しており、際立つ塩の旨味にねっとりと濃厚でクリーミーなスープ。そのままでも充分美味いが、黒トリュフを溶かす事で重層的な旨味を上品な洋風テイストに昇華させる。
