本日は初めての富山ディナー
ミシュラン1つ星、冨久屋を予約！
場所はアーケードからやや外れた
分かりづらい場所。
スマホがないと来れない立地です。
注文したのはおまかせ9075円と
日本酒は勝駒 1750円。
太目の味、旨み強めで美味しい！
メニューは
ズワイ蟹のポン酢ゼリーよせ
筍の唐揚げ
はしりホタルイカ
牡蠣
練りたてつみれ汁
ヤナギバチメのお吸い物
赤イカとヒラメのお造り
蕪の炊きもの
ブリの焼きもの

全体的に素材の味を最大限に活かしていて
味付けは限界まで引いています。
店主曰く
「素材の金目感を強調した複雑な味でなく
身体に素材の良さが染み込むよう
味付けは最小限にしている。
飽きのこない滋味溢れる体験で
精神的な満足感を提供し続けたい。」
との事。
おそらくその削いだ味の裏には
食材への理解と目利き
