細めのお蕎麦

土曜日の12:15頃に到着しました。
店内に待ち席があって2組先にいました。
2024年に食べログのそば百名店に選ばれているお店です。
待つこと10分くらいで席に案内されました。
天井が高くとても素敵な空間です。

なめこおろしそばを玄挽き田舎蕎麦で注文
石川県白山市産のなめこを使用していて
大根おろしと一緒にお蕎麦に和えて頂きます。
大根は辛味大根のおろしでした。

そばは蕎麦の香りがしっかりあって美味しい
なめたけは大きくてヌルッと味も強く美味しい

私は北海道産の蕎麦粉を輸出して10年以上で
携わる以前から蕎麦をたくさん食べ歩いていました。
個人的な好みは蕎麦の風味がある
挽きぐるみの十割の田舎蕎麦が好きです。

チューリップで有名な砺波市で隠れ家的に寛いでいただけます。
店内は、古民家ならではの高い天井が開放的。日本庭園や調度品の数々を眺めながらゆったりとそばを味わえます。
こだわりの手打ちそばは、国内産の玄蕎麦を使用し、必要な量だけを前日に石臼挽きで自家製粉を使用。香り高く甘みのある優しい味わいです。
「かえし」には本みりんを使用、かけとせいろの２種類を作り分けています。
