和歌山のお客様とお仕事でご一緒させていただき伺いました。元々、大阪の銀平さんには何度か伺っていましたが、本店は初めてです。
銀平さんは漁に出る船を持っていて、自前でお魚を仕入れてるとか聞いておりましたが、もちろん市場で仕入れてるものもあるかと思います。
ともかく、和歌山沖で取れる新鮮なお魚が有名で、頼まなくても突き出しの如く出てくるお刺身盛り合わせ(突き出しのレベルではありません)や和歌山の醤油と梅(いずれも和歌山の名産)とだけで煮た煮魚、〆の鯛めしなどが有名ですが、天ぷらなども最高です。
これらに黒牛や紀土などの和歌山を代表する日本酒を合わせると最高のマリアージュです。
このクオリティを東京で食べたら高いんだろうなぁと思う訳です。
また和歌山に来た時はぜひ伺いたいです。
