Intending to eat as many Yamagata specialties as possible, I ordered Yamagata dashi tofu, cold cod soup, pickled greens, chilled meat soba, and hot Japanese sake...! I had eaten Yamagata dashi before at chain restaurants around the country, and I didn't have a good impression of it because it wasn't delicious, but the authentic one is on a whole other level! There's no vegetable smell at all, and the flavor is really good! The cold cod soup has no smell, the body falls apart easily, the milt is plump, and the miso-based soup is the best! Pickled greens have just the right amount of spiciness and great texture! ! It's crunchy and goes great with sake! ! The chilled meat soba is a sweet soup, but it's not overpowering, making it the perfect way to end the meal! ! Everything I eat is good! I love you, Yamagata!
