「レストラン パ・マル」さんへ訪問です。
レストランパマルさんは
山形を代表する人気フレンチレストラン。
オーナーシェフの村山優輔氏は25歳で
山形県天童市に「ビストロ パ・マル」をオープンし2017年山形市に「レストラン パ・マル」として開業。
「パ・マル」とはフランス語で「なかなかいいね！悪くない！」という意味だそうです。
店内は黒のシックな1階カウンター7席に、2階はテーブル席のみです。
冷製で滑らかなカリフラワームースにカレー風味を効かせたズワイガニや、自家製ドライトマト、茗荷、菊、大葉の薬味に菊ソースと山葵ソースを合わせて酸味のバランスと爽やかさの調和が素晴らしい鰹など"食材の組み合わせはひらめき"とおっしゃる村山氏のセンスある食材の調和に脱帽です。
山形河北町産アスパラ、山形モリーユ茸、山形の地鶏、鶴岡産の子羊など、細かい食材までもが地元食材が多く、地元山形の食材の魅力を教えてくれる地産地消の山形フレンチを堪能しました。
春、夏、秋、冬と寒暖の差が激しい山形県は
素敵な食材に溢れており、季節ごとに訪れたいお店だと思います。
次回は夏に青山のモノリスさんとコラボするそうですので是非お邪魔させてもらいたいです。
