Dewaya was the first restaurant in Japan to serve wild vegetables as a high-class dish. It is a famous restaurant representing Yamagata. This time we stayed for one night and two meals. It was the first time we had eaten so many wild vegetables. There were many wild vegetables whose names I did not know, and they explained similar ones in an easy-to-understand way. I learned a lot! Both the dinner and breakfast were delicious!! The room was also clean. Menu: ①. Homemade wild grape jus ②. Appetizer (❶-Nirinsou ❷-Ukogi ❸-Shidoke ❹-Kino-moe ❺-Urui) ③. Small dish seasonal dish (Kogomi with sesame seeds, Angelica walnut miso Kazuyuki, Sennin-no-Kasumi) A rare wild vegetable known as "Sennin-no-Kasumi". A type of moss called "Kibunori" ④. Five-tiered assortment (❶-Gyoja garlic ❷-Sliced wild carrots ❸-Amadokoro ❹-Kanzou ❺- Katakuri flower) ⑤Clear soup: Wild vegetable soba noodles ⑥Wild vegetable tofu with sesame miso sauce ⑦.Seared Sakura trout, Shunran ⑧.Special dish: Charcoal-grilled eel, Shimimochi ⑨.Butterbur shoot and soy milk udon ⑩.Wild vegetable tempura (butterbur shoot, kinome, koshiabura) 11.Gijie dish: Wild vegetable bear hotpot 12.Meal: Ukogi seaweed rolls, warabi miso soup 13.Sweet: Angelica cheesecake This is a recommended lodging for gourmets.
