Hofu City is located in the central southern part of Yamaguchi Prefecture. The south is a lively town lined with factories, but redevelopment has progressed around the station, making for a beautiful streetscape. Among them, there are many old-fashioned restaurants and bars at the north exit where Tenmangu Shrine is located. This restaurant is one of them. I enter the restaurant and go to the back. I sit at the counter. It's nice to see the owner making the sushi right in front of me. First, we toast with a beer. The salted fish served as an appetizer is delicious. It's my first time here, but I can say it's guaranteed to be delicious. For sashimi, I order filefish. The thinly sliced filefish has a good texture and is delicious with a good flavor. I start with ponzu sauce. This is of course delicious. Then I mix the liver with soy sauce and eat it. Both are irresistible. I can say it's exquisite. I stop drinking beer early and switch to cold sake. While drinking Yamaguchi's famous sake, I order salmon roe next. I don't get the salmon roe as Sushi, but as a snack. I eat it wrapped in seaweed. This is also delicious! I also order fried pufferfish. Fugu is a Yamaguchi specialty, so the sake is also from Yamaguchi. I switch to Hofu sake, which my dad recommended. I have fried fugu while drinking the local sake. It can't be bad. It's time to eat Sushi. Crab, tuna, sea urchin and shrimp. I don't eat crab nigiri very often, but the texture is good and crab is a delicacy after all. The tuna is marinated. It has a good flavor and goes well with the rice. Of course, it goes well with the sake. The sea urchin is the best. The crispy seaweed is also good. I was very satisfied with the shrimp and egg! It's been a while since I've enjoyed Sushi at the counter. The atmosphere is good and the service is fun and not excessive.
