本日訪問したのは日和庵。日和庵は山口県関市に位置する和欧風創作料理店です。
日和庵は、大正10年に建築され、80有余年の時を経て2005年7月、現当主吉本日出夫氏の手により、和欧風創作料理「日和庵」となり、今の形となりました。
貴賓室・パーティダイニング・メインダイニング・スカイバーの4つの展開をする日和庵。下関特有の細道と階段を登り高台から見晴らす関門海峡の景色は素晴らしものがあります。
そんな歴史と共に空間も楽しめる日和庵で今回3000円のランチコースをオーダーしました。
お口はじめ
ホウイカ、蕪、海老
ほういかはもっちりしていて味付けも絶妙で、蕪と海老も海老の風味と蕪の食感を丁度良く楽しめる。オニオンマスタードソースも素材を邪魔しない美味しさ
山芋のゼリー寄せ
滑らかでスッと溶ける一品
アミューズ
山口県産長州地鶏と旬野菜のテリーヌ
長州地鶏は滑らかに仕上がり舌あたりが良く、仄かに風味も残る。旬野菜の食感も素晴らしい
芽キャベツと地鶏の低温調理
もっちりした地鶏の美味しさが出ており、みずみずしさもしっかり感じる。芽キャベツの食感もアクセントになっている。
