When customers come to our store, they will first try our signature soup stock. It has a concentrated flavor of bonito from Yaizu and kelp from Rishiri. We use Shinshu buckwheat flour, one of Japan's
...top three soba flours. Please enjoy the traditional flavor of soba that takes advantage of the climate of Nagano Prefecture. We use Koshihikari rice, which is representative of Yamanashi. We also offer dishes made with fresh ingredients such as seafood and vegetables.
