180年前に建てられた古民家で味わう、
八ヶ岳ガストロノミー。
八ヶ岳の清水と澄んだ空気、甲州の大地が育んだ野菜たちが存在感を放つお料理。
工夫を凝らして作り込んだ皿もあれば、シンプルに素材の魅力を引き出した皿もある。
「翠雨」名づけられた夏野菜(うすいえんどう・新玉ねぎ・トマト)のゼリー寄せは、新たまねぎの甘みとトマトジュレの酸味のコントラストを楽しむ清涼感のある一品。
「初物」はオニオンヌーボ、ズッキーニ、空豆、スティックセニョールなどのワンプレート。
シンプルな玉ねぎのグリエだが、驚くほど甘くて瑞々しい玉ねぎ。
チーズを乗せて炙った焼き茄子も、単純ながら力強い美味しさでワインが進む。
写真の鮎のコンフィは飯田の天龍鮎。
パリッと香ばしく焼かれいて美味。
今回は時期を違えたが、6〜7月は地元の桃をふんだんに使った桃コースがあるとのこと。
次回は是非とも味わってみたい。
