"Miso Niku Udon" is made by simmering homemade noodles in a clay pot with a unique blend of red miso, a specialty of Aichi Prefecture, combined with dashi made from freshly shaved bonito flakes. The Yamamotoya Honten style is to use the clay pot lid as a plate, transfer the udon from the pot, blow on it to cool it down, and then eat it. This is the etiquette of Nagoya people who prefer rational things. In addition, we also offer a "Daimyo Iri" with Nagoya Cochin and shrimp tempura as a menu item exclusive to the JR Nagoya Station store! Please enjoy this luxurious dish filled with the charm of Nagoya.
