This is Nagoya. When it comes to eel and hitsumabushi. I went looking for a delicious looking restaurant near my hotel. Until the hitsumabushi is ready, enjoy some cold sake with the umaki. There were no brands on the menu, so I was wondering what kind of choices there would be, but the staff brought out 3 types of cold sake and I chose my favorite. They didn't have my favorite junmai, but I could choose from daiginjo, namazake, and honjozo. The umaki had a deep eel flavor, and as I enjoyed it, my expectations for hitsumabushi increased. Meanwhile, Hitsumabushi arrived. The eel is spread out so that you can't even see the rice. Crispy on the outside, fluffy on the inside, and delicious. When you bite into it, the taste of eel spreads in your mouth. It also comes with a soup. When you open the lid of the bowl, the pleasant aroma of the soup stock wafts through the air. It was delicious and I finished it in no time. Chazuke is normally eaten with tea. If you want to try dashi chazuke, you can order the dashi separately. Eel has become more expensive, but if it's carefully prepared, you'll be satisfied with the price. Thank you for the meal.
