Food ``Miso stewed udon'' made with love using traditional techniques
Miso Nikomi Udon used to be a home-cooked dish unique to this region, made by boiling dumplings and other ingredients in sumashi soup. When they added a special red miso to the soup and turned the dango into udon noodles, they were well received and have now become Local Cuisine loved by the locals. Inheriting traditional cooking methods, our restaurant offers ``nikomi udon'' in which raw noodles are simmered directly in an earthenware pot, rather than ``nabeyaki udon'' in which the noodles are par-boiled. Enjoy the chewy noodles that go well with the soup to your heart's content!

The homemade noodles, which are adjusted by a dedicated craftsman according to the daily temperature and humidity, are made using only flour and fresh water, without adding salt. It has a chewy texture that will surprise you when you eat it for the first time. The soup uses a dashi stock that combines bonito flakes, horse mackerel flakes, and chicken stock, and an original red miso brewed using a secret recipe. By cooking and serving the food in an earthenware pot made from clay from Iga City, Mie Prefecture, the flavor of the ingredients is preserved and the food stays warm for a long time.
