Kawabun is a Japanese restaurant that was founded in the Kanei era after the construction of Nagoya Castle. The first generation, Kawachiya Bunzaemon, moved across Kiyosu to the Go board town of Nagoya and opened his business as a fish shop, Kawachiya. Afterwards, he was praised by the Owari Tokugawa family for his discerning taste in fish, and turned into a caterer and restaurant. Since the Meiji era, it has served as a guest house for central Japan, and has been visited by important people from Japan and abroad, including successive prime ministers such as Hirobumi Ito, Shigeru Yoshida, and Kakuei Tanaka, as well as former French President Mitterrand. It has been loved by many celebrities since ancient times.
Food "Japanese-style meal" at restaurant Kabun
Ingredients are carefully selected from those grown in Japan's rich natural environment, keeping in mind the "seasonality" of each season. For seasonings, we use fermented foods such as miso, soy sauce, and mirin, as well as sansho, mustard, yuzu, and wasabi to create our menus using techniques that make the most of seasonal ingredients. Among Japanese-style meal that are attracting attention from all over the world, our restaurant offers ``Kaiseki,'' which is said to be ``eat with a bowl and eat with your eyes.''
