Food We are particular about our homemade supple noodles, special sauce, and rare char siu.
The noodles used for the chicken soba are made in-house, using the same flour used in Sanuki udon. Instead of using a pin mixer specialized for the "mixing" process, we use a kneader to "knead" the noodles, resulting in noodles that are both chewy and supple. The special soy sauce sauce is a unique blend of three carefully selected soy sauces, mirin, and sake. It is also topped with special rare char siu that has been slowly cooked using the vacuum low temperature cooking method. Please enjoy a cup full of commitment.
