At the affiliated restaurant [Bistro Gorilla] on the first floor, the chef grills and serves the food, but at [Charcoal-Yakiniku (Grilled meat) Kirin], customers grill it themselves on a charcoal grill and enjoy it. I think it's rare in Japan that you can enjoy Sakaeya meat cooked to your preference. Aged meat has a unique nutty aroma and concentrated umami, making it a truly ``mouth-pleasing'' taste. We recommend grilling until the aroma of the charcoal remains.

What makes our restaurant unique is that we only serve meat from Sakaeya, a butcher shop in Kusatsu, Shiga Prefecture. "Sakaeya" is a butcher shop that is highly trusted by chefs all over the country. Mr. Shinbo, the company's representative, considers the cow's background and how it was raised to be part of the product, and examines the unique characteristics of each cow's meat. In particular, his knowledge and skills regarding aged beef from multi-parous cows are second to none. Please enjoy the flavor of meat that has been stored at low temperatures and thoroughly controlled in a dedicated refrigerator.
