ChefGrand Chef Katsusuke Uei
Born in 1969 in Nagoya City, Aichi Prefecture. Studied under Yukihiko Yamamura of the French restaurant "Ramonie de la Lumière" in Gifu. At the age of 27 (1996), he moved to Europe and trained at ``Le Calandre'' in Italy and ``Chez Michel'' in France. After returning to Japan, in June 2001, at the age of 32, he opened his own restaurant, Tsubochuten. In April 2010, we relocated to Aoi Mazak Art Plaza, Higashi Ward, Nagoya City. 1 star in the 2019 Tokai Michelin Guide, listed in Gault & Millau 2022
