In Nagoya, my craving for soba led me to a restaurant. Despite arriving late, I made a reservation for 8pm and walked through the door. True to the restaurant's reputation, the owner and his wife, who greet each other with just a few words, welcome visitors with a warm smile. ◆ Selected "Hei Course" 9,800 yen ・Hassun that heralds the end of winter → Sea jewel mullet sushi, bright shrimp, black-throated sea bream, yellowtail Sushi, butterbur and wasabi flowers that herald spring.・Seafood from Chiba and Kagoshima → A collaboration of clams and dried bonito flakes, an exquisite harmony with carefully prepared vegetables.・Carefully selected sashimi → The rich flavor of red shellfish, the sweetness of cod milt, roasted barracuda, sea bream, and Botan shrimp with caviar.・Blessings from Miyazaki and Aichi → Perfect balance of mullet, green onion, and yuzu.・A wonderful combination of meat and fish → A dish of Mikawa Hourai beef and sweet sea bream, along with Brussels sprouts and asparagus, takes on a new flavor with curry paste.・Hand-made soba noodles from Fukui → Simple yet richly fragrant soba noodles with a trio of salt, mullet roe, and tsuyu. Although the sharpness of the soup was a little lacking, the sobayu was exceptional.・Finish with Kumamoto setoka, walnuts, and blue cheese → The noble taste of setoka is perfect for the end of the day. Blue cheese has a perfect balance and is easy to eat. Tonight's special dish was the mullet roe that was used in every dish. It was a night where you could feel the chef's careful attention to detail in every dish.
