上司に連れてってもらいました。
はっきり言って立地は良くないと思います。
ただ、お客さんいっぱいでした。
これは期待できる。
さて、お肉、、、
と思ったら、オーナーさんが丁寧に説明、そして、今日はどの部位がいいとか教えてくれました。
まずは、近江牛のタンを頂く。
リアル国産のタンって、人生で初めて食べたかも。何だこの旨味と柔らかさ、、、
『それくらい、特にタンは手に入らないんですよ。』
オーナーさんが焼きながら教えてくれます。
さて。ここでもう一つの衝撃。
サシが入ったお肉たち、口いっぱいに脂がとろけ、旨味が広がるのですが、全くしつこくなくて、どんどん食べても平気なんです。
『本当に良い肉は胃もたれしない』と言うオーナーさんの自信のコメントに身をもって納得。
『本気で近江牛を育てている生産者さんのところから仕入れさせてもらってます。近江牛の中でも本当に差があって、その中でも自分がいいと思ったものを』とのこと。
実際に現地に赴き、牛が食べるエサをご本人が食べる、そこから初めて選び上げたというオーナーさん。
オーナーさんが本当に近江牛に惚れ込んでるんだなぁと言うのが伝わって来るのみでした。
よくある押し売り口上的なのではなく、情熱でした。
こういう本気、夢中な方がやっているお店に出会うと料理以上に幸せな気分になれます。
まさに肉汁と情熱が溢れかえる劇場でした。
