八事にあるフランス料理「 Heritage エリタージュ」
「八事」駅から徒歩5分程度の場所にあり、住宅街手前のマンションの1階にあります。
2014年8月のオープン、人気の正統派フレンチのお店。 Heritage、遺産です。伝承とも。
オーナーシェフは、加藤さん。名古屋松坂屋にあった「ラ・ターブル・ドゥ・ジョエル・ロブション」でシェフを務め、恵比寿「ラ ターブル ドゥ ジョエル・ロブション」「ラトリエ ドゥ ジョエル・ロブション」でスーシェフを務めたのちに、開業。
友人とランチ。
ランチは、3850円のコースと6050円のコースの二つ。
3850円の方をお願いしました。
【口取り】
「ポークリエットのカナッペ」
豚肉をペースト状にしたリエットをカリカリバケットにのせてカナッペにして。
【パン】
「バケット」
「まるパン」
まるパンは、甘くてふわふわのブリオッシュ風。
【前菜】
「さんまのポワレサラダ仕立て」
さんまのポワレにバジルのピュレとトマトにクリームを合わせたトマトのクーリエ。上には葱オイル、クミンきかせたれんこんの酢漬け“グレッグ”、きのこのマリネ、小松菜を敷いて。
脂が程良くのったさんまにハーブがキリッときいて美味。
【スープ】
「かぼちゃの温かいスープ」
ほんのりと甘いかぼちゃのスープにベーコン、クルトン、あさつきを浮かべて。
【メイン】
「合鴨もも肉のロースト」
鴨らしい弾力のある旨味の鴨もも肉をローストして、鴨肉のジュのソース。オクラ、にんにくの芽、いんげん、白いんげん豆の粒マスタード煮込みを添えて。
【デザート】
「栗のクリームブリュレ､コーヒーのアイスクリーム添え。」
栗のペーストを加えた生地にカソナードをかけて、表面をバーナーでキャラメリゼ。上には、コーヒー風味のアイスクリーム、コーヒー豆とマロングラッセのクランブルをトッピング。
【食後の飲み物】

さんまは印象に強く残るほど美味しかった。他にも火入れ、ハーブのきかせ方、などなど素晴らしかったです。
ロブション時代ご一緒だった、渡辺シェフだけでなく栗原シェフもご存知とかで盛り上がりました。
マダムの優しくテキパキと切り盛りされるお姿は、目を見張る素晴らしさ。ご夫婦の温かい空間が素敵なレストランです。
