Bincho charcoal's high-temperature and intense far-infrared rays allow you to grill the ingredients without losing their flavor. Furthermore, we have prepared a custom-made grill to achieve the ideal grilling results. It takes skill to know how to handle charcoal and determine the optimal degree of grilling for each material.
Food ◎Ageing below freezing. Bring out the maximum flavor of chicken.
At Torimusubi, we use ``sub-zero aging'' to maximize the goodness of each part of the chicken, and want each chicken to be eaten in its best condition. The ingredients are aged slowly and freshly in an environment that does not freeze even though the temperature is below freezing. We determine the optimal aging time for each part and double the flavor components inherent in the ingredients.
Food ◎Kombu Salt - Because it is simple, we are particular about everything.
Homemade kelp salt is made by boiling down kelp soup stock, which has no edges and is mellow, synergistically enhancing the flavor of the ingredients. Adjusting the amount of salt to suit the ingredients is a skill that can only be achieved by a skilled artisan.
