Carefully select eels that are large and have thick flesh. It has high-quality fat and the skin is soft and high-quality. The belly-opened eel is carefully skewered and grilled evenly in a local grill, resulting in a crispy skin and fluffy, delicious meat. The rice is Koshihikari from Toyama Prefecture, which is cooked fluffy. The sauce has such a long history that it is said that it was taken into air raid shelters during the war to protect it. It has just the right amount of sweetness and brings out the deliciousness of the eel.
