At Shushoku Sai Bansui, we use white charcoal, which was revived in our hometown of Hiyama, Noshiro City, through the efforts of a group of university students in the prefecture who are working to revitalize the region. White charcoal ignites more slowly than black charcoal, but it has a long fire life.

We procure carefully selected seasonal fish caught fresh in the morning, and serve you the finest dishes with plenty of fat and piquancy!
