狩猟免許とソムリエの資格を持つシェフのイタリアン。
シェフ林隆寛さんは同市の名店「オステリア・エノテカ・ダ・サスィーノ」で修業、カジュアルで食べ応えのあるジビエ料理が楽しめます。
アラカルトとコース両方あり、前菜、パスタ2種とメイン2種盛とデザートで6,000円はお値打ちすぎでした。
この日のメインは30日熟成した岩手の短角牛と青森のカルガモの2種盛。しかもパスタには白トリュフとタヤリン、ジビエのラビオリが出てきて驚きました。
料理はワンオペ。他のゲストはほぼ全員アラカルトを頼んでいたので、ちょい時間がかかるのは致し方ないところ。
ワインは笹森さんのがオンリストされていて、ネッビオーロが9,000円で頂けました。
林さんがハンターになった理由は、間接的にはサスィーノの笹森さんの影響だといいます。
ワインを造る笹森さんとは守備範囲がかぶらないように狩猟の方へ。
この日カルガモがメインだった理由は「この時期は渡り鳥より留鳥のカルガモの方が肥えているから」。
渡り鳥のマガモや青首はまだ到着したばかりの時期で、まだ身がやせているとのこと、ジビエの始まりの時期にふさわしい肉料理でした。
