しんぞうは酢味噌と胡麻油でいただく。
サクっとした歯応えで味はさっぱりとしたレバーな似ている。
鍋は白味噌ベースに生姜がたっぷり。
馬肉なら赤身は噛み締進めると味が広がり、脂身は独特な旨味があり特有。稀に馬のにおいがするのがあるがほぼ気にならない。青森というコトでセンベエがはいるのは面白い。
今回のラインナップでヒット賞は串焼き。
食感やイメージはねぎまで、味は牛串に近く味が濃い。
タレではなく旨塩タレを使い胡椒でアクセントを加えている。鍋と違い焼くことで味が凝縮している。
歯応えありすぎて噛みきれないのはご愛嬌。
珍味系の料理はコスパが悪いことがほとんどだか
