このケーキを求め、遠くは県外から来られるお客様も珍しくなくなりました。 店を代表するケーキとして店名と同じ名を付けたこのケーキは、スポンジを熟成させることにより、うまみをを出し、生クリームに含まれる水分を利用し、キルシュの香りとサンドされた苺の香りを生地に移すことにより、全体の香りと食感の一体感をどう出すかが製法上のポイントとなります。 スポンジに生クリームを塗っただけの苺ショートとは違うのです。 |
