作るのに３日かかるショートケーキ 「エスプリ」
このケーキを求め、遠くは県外から来られるお客様も珍しくなくなりました。 店を代表するケーキとして店名と同じ名を付けたこのケーキは、スポンジを熟成させることにより、うまみをを出し、生クリームに含まれる水分を利用し、キルシュの香りとサンドされた苺の香りを生地に移すことにより、全体の香りと食感の一体感をどう出すかが製法上のポイントとなります。 スポンジに生クリームを塗っただけの苺ショートとは違うのです。
... 手間と時間をかければ、苺ショートケーキもここまでおいしくなります。 ケーキは食べる時の品温により、大きく味わいが変わってしまいます。bestな状態で食べていただきたく、喫茶コーナーを広く設け、ケーキセットのドリンクも以前より大幅にお安くいたしました。 心を込めて作ったケーキをおいしく食べていただきたい、その方がお金儲けよりも大事なことだと一人のパティシエとして私は思うのです。 オーナーシェフ 吉丸忠司
