I came to Fukui Prefecture to go to my favorite Sushi Jubei. Go here the day before. This is a Yakitori (grilled chicken skewers) that uses olive chicken from Fukui Prefecture. Personally, I don't use Michelin as a guide for eating out, but it seems that it was also featured in the Michelin Hokuriku edition. Olive chicken is raised by feeding Sanuki Cochin and Seto Akadori chickens from Kagawa Prefecture with heat-dried olive fruit. It's refreshing and flavorful, and it was also served at Yakitori and Sake Jidori Labo in Takamatsu City, Kagawa Prefecture, which I visited last month. Start at the counter in a dignified modern Japanese interior. The operation is run by three people: a young man who is a skilled baker (he's incredibly unfriendly), a young man who looks like a sommelier, and a female staff member. I ordered a beer first, and then a cold drink. What we received is as follows. ●Appetizers Namerou-style local chicken, sashimi-style gizzard, seared Fukuji chicken, and raw silk breast meat. When you open the lid of the wooden box, a white cloud of dry ice fills the air, just like the store's name, Asagiri. I thought about leaving the restaurant halfway through, but on the other hand, the sommelier-like person (probably the owner) and the female staff provided perfect customer service. The sommelier-like person explained the dishes carefully, the female staff served customers with a wonderful smile, and Punpunmaru-kun. I was told that being a tsundere all over the place was going to make me mentally crazy (lol). The customer service of the two of them was so wonderful that I started to think of Punpunmaru as cute. Regarding yakitori, the skewers and pasteurization were good, but the skewers served with salt were generally salty and the sauce was thick and sweet. I think people have their own preferences when it comes to sauces, but saltiness is important. The grilled chicken fillet and thigh meat at the beginning were very delicious and conveyed the goodness of olive chicken. Also, the nagaimo (Japanese yam) dressed with plum vinegar is just the best. It is ranked number one in the chopstick rest ranking among Yakitori (grilled chicken skewers). The sake lineup is extensive, with a focus on local sake from Fukui Prefecture, and the prices are reasonable. With its modern Japanese interior and tamatebako presentation, girls' gatherings and couples will likely be pleased. Thank you for the meal.
