千葉県松戸にある「中華蕎麦とみ田」の系列店「大勝軒ROZEO」で修行経験のある店主のお店。
とみ田ならではの自家製極太麺に濃厚な豚骨魚介のつけダレのつけ麺が看板メニューになっています☝
食材にもしっかりとこだわりがあり、最高の１杯を提供する笹はらさんです。
福井市にも「笹の極み」というつけ麺店を展開する人気店のようですね。
初めてですが、物珍しさに味噌味のつけ麺をオーダーです。
全部のせトッピングは「味玉＋チャーシュー２枚＋のり２枚」とのこと。
つけダレは見るからに濃厚そうで、とみ田系列らしい刻みゆずがトッピング。
麺をはじめとしてチャーシューなどの具材がキレイに盛り付けされています。
【つけダレ】
刻みネギや柚子、ゴマなど入っています。
レンゲですくって一口すするとかなり濃厚。
薬味の味がまったくわからないぞ(笑)
味噌なんだろうけど、塩分濃度の高さが際立ちますね。
【麺】
上質な国産小麦のみ使用したという極太自家製麺。
全粒粉のような粒が見えており、ゴワっとした食感が特徴的ですね～。
キンキンに冷えているのでコシがしっかりと感じられます＾＾
つけダレにディップしても麺の存在感がばっちりです
