飲食店のコストバランスについて。
一般的にFLコスト60パーセントと言われる。
FLとは、フード、レイバーのことで、
食材原価と人件費を60％位で収めましょうね！
と言うのが教科書的に言われている。
つまり、3,000円の客単価であれば食材原価＋人件費で1,800円で収めたい。って事。更に残った1,200円から光熱費や消耗品、減価償却をさっ引いて最終利益が300円残れば立派です。
一般的な飲食業のFL内訳は食材原価30％、人件費30％であるが、業態によっても違ってて、焼肉屋は肉さえ提供すれば後は客が勝手に焼いて食うから人件費は30%もかけちゃいけないし、逆にドリンク中心のカフェなら30%も原価をかけちゃいけない。
このFL60%の概念も変わってきてて、原価で食べ物を提供する代わりに入場料を別途取るなど新たな潮流もあるようだ。
一方、飲食店でFL以外で非常に重要なのが、「家賃」である。飲食店の固定費って何かといえば言うまでも無く、家賃であるが、客が入ってようが入ってなかろうが家賃だけは固定、毎月賃貸契約書に基づいた金額を支払う訳だが、固定プラス売上の◯%というのもあるが、この家賃がボディーブローのような効いてくる。
これも一般的には売上の10%位を目安にしたいところ。
月の売上が500万円なら家賃は50万円迄に抑えたい。
だから開業前にシュミレーションを行う際、店舗の場所選びはロケーションという意味もあるが家賃がいくらか？と言うことが非常に重要で、ココを間違うとどんなにお客さんが入っても利益が残らない。といった事に陥ることもあるので要注意。
単純に損益シュミレーションをする場合、客単価×客数×営業日数であるが、客数は席数によってある程度アッパーが決まります。じゃあ席数は広さによってアッパーが決まるので、居酒屋の一般論に当てはめると坪数×1.5倍の席数と想定でき、50坪であれば75席が適当で、そこからシュミレーションの基礎ができるとも言える。
そしてこの店、博多駅の筑紫口徒歩5分、人の流れは黙っててもわんさか！サラリーマン、OL、海外インバウンド、集客だけみるとロケーションは最高の場所。
家賃っていくらなの？コレが気になってしょうがない！
焼き鳥も一品料理も普通。に、美味い。
接客も普通。に、良い。
おおむね良いお店である。
坪単価３万円くらいが相場かな。広さは推定４０坪、よって家賃は120万円（推定）。
では、逆算して月の売り上げは1200万円！？（推定）
客単価は4,000円、平日は125名で50万円/日×21日
週末は4,000円の、100名で40万円/日×9日
月間約1,400万円の売上？
