Mr. Izumi, who has been a Sushi chef for 33 years, personally selects the ingredients he uses at the fish market. Focusing on natural local fish from Fukuoka Prefecture, we use seasonal ingredients such as tuna shipped directly from Ohata and Oma in Aomori Prefecture, Shiogama City in Miyagi Prefecture, and sea urchin from Hokkaido.
