The finest eel, mainly from Mikawa Isshiki, is thick and has a rich flavor. We bake it after receiving the order from the customer. The surface is seared all at once over a strong charcoal fire, locking in the flavor. Then, use the secret sauce to make it the perfect and perfect seasoning.
