Every day, he carefully selects only the best quality eels from famous eel-producing areas. These eels are then grilled slowly and carefully over high-quality binchotan charcoal. It is the skill of a master chef to carefully assess the condition of both the binchotan charcoal and the eel and grill them to the perfect temperature. The eels are crispy on the outside and plump on the inside, making them exquisite. He is particular about the secret sauce that is constantly being replenished and the rice, and delivers the finest delicacies.

What brings out the flavor of the eel is Unagi Meisui's original secret sauce. It is a blend of soy sauce, mirin, sake, and sugar from Gifu Prefecture. For the rice, we use domestic Koshihikari rice, carefully selected for its compatibility with eel.
