Food ``Seiko crab'' caught in winter and fatty black throat sea bass are served grilled with salt.
The recommended ``Seiko crab'' is a female snow crab that is said to only be caught for two months, November and December. The small crabs are boiled in salt and carefully removed to make them easier to eat before serving. The ovary, called “Uchiko,” is delicious. Serve with crab vinegar if you like. In addition, you can enjoy grilled dogfish, a white fish that is fatty all year round, with salt. Prices will vary depending on purchasing conditions.
