This is a restaurant where the owner, who loves Hida's nature, is particular about sourcing and cooking with the desire to serve his customers with the most delicious, freshly-harvested, seasonal natural ingredients possible! In the spring, we have fragrant wild vegetables, in the summer, we have extremely fresh clear-water fish, in the fall, we have wild mushrooms that are rarely available on the market, and in the winter, we have really delicious wild game that we purchase from the reliable Matagi. Of course, the owner is very particular about using only A-5 grade Hida beef.
