小料理屋で瀬戸内魚料理

休日前の週末に予約して20時頃友人と2人で訪問。コースのみのようなので、天然はげコース7,000円をお願いしました。席はカウンターに座りました。
こちらカウンター8席に奥に座敷が1部屋あります。お料理される方と向かい合って食事する感じです。

早速お通しで筍の煮物、里芋の煮物、そら豆とクリームチーズ和え?が到着。季節感があっていいです。

お通し食べてると目の前の水槽から大ぶりのたぶんウマヅラハギが網で掬われて行きます。けっこう大きめで全部食べれるか心配なサイズです。

程なく腹身の炙り刺しと縁側の胡麻醤油和えが到着。炙り刺しはわさびだけで食べるみたいです。炙られて香ばしい皮面と弾力のあるギュッとしまった身で旨みがすごい。縁側もぷりぷりして濃いめの味付けがお酒に合います。

そして生ちりが到着!規則正しく薄く切り揃えてある皿上は見た目がまず美しい。肝を透き通る刺身で巻いてポン酢につけて食べると…最高です。新鮮なほど肝って美味しいと聞きますが、ほんとですね。全然臭みもなく濃厚な海の旨みがギュッと詰まったような美味さです。

唐揚げも骨周りの身が柔らかくて美味しい。
締めは雑炊の代わりにウマヅラハギの身がたっぷり入ったお吸い物と牡蠣のお寿司をいただきましたがこれまた素晴らしく濃厚な牡蠣で美味しい。

飲み物は生ビール、日本酒の山(亀齢酒造)美和桜生酛超辛口(美和桜酒造)などをいただきました。

天然の肝がとても美味しく、非常に満足度の高いお食事でした!
