A playful hideaway kaiseki restaurant
広島電鉄胡町電停から徒歩6分の「中島康三郎商店」さん 2006年開業、運営は広島の『料理一門会 笹組』株式会社弐会ホールディングス【1998年設立 会長:佐々木康二氏、代表取締役:中島 幹正氏】
店内は狭く入り組んだ通路の先にある個室に通され、シンプルな白壁に腰高までの木板張り、木製テーブルセットと合わせて和モダンな雰囲気
お酒①ヱビスビール(瓶ビール、サッポロビール)
①炙り赤叺の赤酢シャリの棒寿司、磯辺巻き仕立て、紫蘇の花添え 赤酢のシャリの温度が低くてビックリしました 作り置きなのでしょうね
②鱸、寒鰤、針鳴門金時(薩摩芋)&浜防風、酢橘添え まさかの丸鱸、やっぱり泥臭い 針鳴門金時は味わいが殆んど無くパサパサで口の水分を持っていってしまう 寒鰤は少し臭みを感じました
八寸③蕗と独活の土佐(鰹節)和え④黒海鼠と焼き真穴子の酢の物⑤湯引き真鱈白子の出汁餡掛け⑥焼き茄子の針茗荷載せ⑦真蛸の軟か煮⑧大葉鰯の煮付け⑨真鯛の真子の山椒煮
八寸③蕗と独活の土佐(鰹節)和え④黒海鼠と焼き真穴子の酢の物⑤湯引き真鱈白子の出汁餡掛け⑥焼き茄子の針茗荷載せ⑦真蛸の軟か煮⑧大葉鰯の煮付け⑨真鯛の真子の山椒煮 鰯が強烈に生臭く閉口しました
お酒②黒龍 いっちょらい(福井) 米品種:五百万石 100%、精米歩合55%
⑩九絵と真鯛の擂り身&大葉の揚げ春巻き 九絵の擂り身や真鯛の擂り身を混ぜて揚げるともう何の魚だったのか判別不能です 素直に刺身で良いんじゃないのかなぁ
⑪河豚の身と皮、浅漬け白菜添え 河豚の種類は説明無し、しかもタレを掛けたら河豚のアミノ酸の旨みとか分からないよ
⑫鰻蒲焼き&南関揚げ、胡瓜添えのライスペーパー巻き 北京ダック風に頂きましたが、巻いて食べるとポタポタと滴が落ちてきて興醒め
⑬茶碗蒸し、グリーンピースバター載せ 特に可もなく不可もない
⑭グリル合鴨ロース、マイクロリーフハーブ&菜の花のお浸し添え、低温調理の島根ポーク、辛子蓮根添え 合鴨ロースは肉汁が沢山浮かび少し臭みを感じました 島根ポークもタレで和えてありましたが好みではなかった
⑮二八蕎麦の削り自家製唐墨掛け 二八蕎麦は殆んど香りなく、喉越しや歯応えもイマイチ 唐墨も多くもなく少なくもない中途半端で残念な印象
⑯文旦と濾し餡の求肥巻き大福と蕎麦茶 これはまずまず良かった

The interior of the restaurant is led to a private room at the end of a narrow and intricate passage, and it has a Japanese modern atmosphere with simple white walls, waist-high wooden boards, and a wooden table set. In addition to the counter seats, there seem to be large and small private rooms, and there are 24 seats. The Tsubaki course (11,880 yen including tax) and the cost of alcohol are 14,570 yen. There is a playful feeling that soy sauce, salt, and vinegar in a small plate are hidden in the drawer of the table. The wide variety of dishes and the way they are served are also playful and interesting, but there were some disappointing parts about the ingredients and cooking. It was a treat.
