The course changes with the season, but Chef Akai says, "there is always a common theme for the first two dishes." The first dish is warm, simple, and highlights the quality of the ingredients. Pictured is peanut porridge sourced from a nearby farm. It is a flavorful dish made by boiling the peanuts for three hours in spring water, cooking the rice in the broth, and finishing with only salt and olive oil. Once the body has warmed up, the second dish is a sour dish to stimulate the appetite, an exquisite course composition that takes into consideration the physiology of the eater.

Miyajimaguchi in Hatsukaichi City, Hiroshima Prefecture, is the gateway to Miyajima, a World Heritage Site. A little away from the center, on a quiet hill, Chef Akai has finally opened his own restaurant, "AKAI," in his hometown of Hiroshima. While the quaint 80-year-old building's exterior remains almost intact, the interior has been renovated to a modern design with an open kitchen and a counter that seats eight. One wall is made of glass, allowing guests to enjoy a relaxing view of the garden from their seats.

Chef Akai's policy is not to use any decorative ingredients to add visual appeal. He often places the main dish almost in the center of the dish, and says that the best way to present it is on a round, white dish. The colored plates are used to accentuate the course. Chef Akai personally visited various pottery artists from Etajima to Karatsu in Hiroshima to order the dishes, which can be enjoyed alongside the food.
The philosophy is to capture the essence of the ingredients and bring out their flavor. This is the best dining experience you can have in Hiroshima.
