Food Soba from Daisetsu, Kamikawa-cho, Hokkaido
Kiri no Shizuku's soba noodles are made with buckwheat flour grown in Kamikawa Town, Hokkaido. Produced in the fertile land at the foot of the Daisetsu Mountain Range, it is characterized by its fragrant aroma and rich flavor.
Food stone mill
The flour is carefully ground in a stone mill by Asahikawa Dokai Seifun, which was founded in 1923.
Food homemade noodles
At our own noodle making factory in Motomachi, our craftsmen adjust the amount of water to match the temperature and humidity of the day, and deliver the freshly made noodles to restaurant twice a day.
Others Special soba soup
We make ``kaketsuyu'' and ``moritsuyu'' individually based on carefully selected soy sauce and two types of bonito flakes. “Moritsuyu” is aged for two weeks before being served.
