The buckwheat flour under the mist is made from buckwheat from Daisetsu in Kamikawa-cho, Hokkaido, which is carefully ground in a stone mill by the local Dokai Flour Mill, which was founded in 1922. The noodles are made by craftsmen at the noodle factory next to restaurant, using a mixture that matches the temperature and humidity of the day.
