朝からウニ丼
「函館駅」から徒歩３分程のところにある「うに むらかみ 函館本店」さんに伺いました。
朝市の奥の方に店舗はありました。
ウニの加工会社の直営店との事でミョウバン不使用の無添加のウニを使用しているそうです。
食堂のような感じかと思っていましたが、木目を基調としている店内は小綺麗です。テーブル席の他に小上がり席などもありました。
私は『函館近海ムラサキ雲丹の無添加生ウニ丼 レギュラー』を注文しました。
程なくして到着しました。思ったより小さめな丼でしたが、ウニが美しく並べられています。
早速実食。確かにミョウバンの苦みは全くありません。口溶けも良く、甘味もしっかりあります。
深みのようなものは少なかったですが、旬ではない時期にもかかわらずこのクオリティーは良かったです。
続いてお米を食べてみると米自体がしっかりしているのですが、固いわけではなく噛むと水分を感じる印象を持ちました。「ふっくりんこ」という北海道米を使用しているそうです

*This is a small restaurant with few seats. When it is busy, we may limit the time you can use the seats, and we may not be able to accept reservations during Golden Obon (summer holiday in Japan), etc. Our sister restaurant, a 3-minute walk from the main Hakodate restaurant, has 48 seats in private rooms, booth seats, table seats, and counter seats. When it is busy or fully booked, we recommend using our sister restaurant. Open from 11:30 to 14:30 (last order 14:00) and 17:30 to 21:30 (last order 21:00). We accept reservations from one person to groups (around 20 people). |
北の港町函館市内に店を構える「うに むらかみ 函館本店」さんに再訪いたしました。
アクセスは、JR函館本線 函館駅より歩いて歩いて３分程です。
函館市電 函館駅前駅も徒歩圏内です。
朝市で賑わう開港通りから路地を入った所に位置します。
店頭には大きく「うに丼」と看板が掲げられています。
店内にアワビなどの貝類が種類別に分けられている水槽が、出迎えてくれます。
続々とゲストが来店しています。
本日いただいたメニューです。
○無添加生うに刺し
濃厚な甘みのうにです。
口の中でとろけます。
○うに殻焼き（エゾバフンウニ）
やや赤みの強いうにが殻の中にたっぷり入ってい提供されます。
生のうにとは違い、磯の香りひろがる上品な味わいです。
焼くことで水分が抜け、旨味が広がります。
○サラダ
一枚の器の中にうに、かに、刺身とフレッシュな野菜とともにカラフルな盛り付けになっています。
函館を訪れた時は、味わいたい店です。
また是非再訪したいと思います。
