This is a standard course of aged sea bream that has been left to rest for about two days after being caught to bring out the flavor. Please enjoy it by quickly dipping it in Hachimaru's proud broth made from dried sea bream backbone and kelp.

Food Hachimaru's special soup stock
Our specialty soup stock. First, make a dashi stock using the sea bream head and kelp. After filtering, we add sea bream bones that have been dried and roasted, and boil them slowly.We use plenty of bonito flakes to create a rich and aromatic soup stock. Another important point is that our soup stock is served at 80 degrees Celsius.
Food Aged sea bream
Our main fish is aged sea bream, which is aged for 3 to 5 days from the day it is harvested. Aging brings out the flavor and sweetness, and roasting the skin to create a frosted texture adds aroma. Please enjoy the original taste of the ingredients by soaking them in our specially selected soup stock.
Food Sea bream rice
Kamameshi is cooked one by one using Hachimaru's special dashi soup and plenty of sea bream. Our kama-meshi is Hitsumabushi-style, and can be enjoyed in 3 steps: first as is, then with homemade sesame salt and sudashi, and finally with the delicious dashi stock left in the pot.
Food homemade raw ponzu sauce
A refreshing homemade ponzu sauce with a refreshing citrus aroma, made with sudachi and yuzu directly purchased from JA Tokushima, and domestically produced bonito flakes and kelp. This ponzu sauce has been well received as it goes well with our aged sea bream and seasonal seafood. Please try the dashi shabu with this raw ponzu sauce at least once.
