自身が好きだったのは熟成牛ですね。
自分は魚の粕漬けや味噌漬けが好きなのですが、白カビで熟成させることで麹漬けのような風味と甘さとまろやかさが引き出されていました！
あとはガスパッチョのムース: 本場スペインの美味しいガスパッチョの味をしたムースです。
甲殻類のカルドッソも出汁がふんだんに出ていて3杯おかわりしました。
ただ最近行った代々木上原のイルプレージョの魚介リゾットの方が、エビだけでなくいろんな魚の出汁が混ざってより濃厚で複雑味がございました。
総じて素晴らしく、全国食べログスペイン料理3位は至極妥当な評価かとおもいます。
和の食材を活かし、味付けをやさしめにした繊細な創作スペイン料理だと思います。
若い給仕の方が、料理に関するこちらの質問に全く答えられなかったのは少し残念でした。このようなお店で働く以上はある程度突っ込んだ料理の解説もできるようにしておくべきかと思います。
