Food (Guuho Specialty) Rokko Champignon and Truffle Ragout
Mushroom pasta is definitely one of Guho's specialties. The only ingredient is mushrooms. I don't even use cheese. It's a very simple dish, but the flavor and aroma of the mushrooms hits your tongue and nose, making you unable to stop drinking wine.The red wine from Piedmont goes perfectly with this dish. For the noodles, use kitara with a square cross section. This is because it mixes well with the sauce and has the best balance in the mouth.

It is no exaggeration to say that this dish takes the most time and effort. Beef cheeks are marinated in red wine, aromatic vegetables, and about 6 types of spices for a full day, then simmered for about 3 to 4 hours. Once it's cooked, it's soaked in the broth again for a day to let the flavor infuse. You can actually eat it on the third day after preparing it. It's already here. For the garnish, carrots are simmered in orange juice and pureed. Rather than eating them together, please enjoy them as a break from rich stews.
